Salsa Chicken with Avocado and Quinoa

So Today I made a really really difficult recipe. You should probably get a pen and some paper to write it down so you can follow.


  1. Get out your crock pot.
  2. Turn it on low.
  3. Throw in 4  frozen chicken breasts and a can of salsa for about 8 hours before you go to work. (or if you don't work, catch up on season three of Downton Abbey Here ... if you don't watch Downton Abbey you are definitely missing out)
  4. Throw in cheese I threw in a half a cup ( I like cheese) for 15 minutes on low.
  5. Cook quinoa ( I liked this brand)
  6. Mix quinoa, salsa chicken in a bowl, top with fresh avocado, chopped red onions and more cheese (if you like cheese like me). 
  7. Enjoy.

Really Really Difficult, Right? Well maybe not, but it is delicious and gluten free!
